Origin of the grape:
Vineyards located in the central valley.
Climate:
Sub-humid Mediterranean climate with average annual rainfall of 700 mm, concentrated in the winter months. Thesummer is dry with hot days and cold nights, with temperature differences between day and night of 18°C to 20°C.Temperatures are influenced by the winds from the Andes mountains.
Soil:
Stony soils of alluvial and colluvial origin.Vineyard management:The plantation has a density of 5,000 plants/hectare, with a trellis system and mixed pruning. Shoot thinning in springand early summer; manual leaf removal in mid-January to increase grape exposure.

Winemaking
The Squid Inc philosophy is to gently extract and preserve the aromas, flavors, and unique deep color of the exceptionalCabernet Sauvignon fruit.
The process begins by cooling the grapes to around 51°F before pre-fermentation. Maceration lasts a lengthy 84 hoursto optimize aromatics and color extraction. Three daily pump-overs ensure thorough extraction, while fermentationenriches the wine’s structure. Following fermentation there is an additional week of post fermentation maceration.
After natural malolactic fermentation, the wine quietly ages in French oak barrels for 10 months, imparting subtle oaknuances. Post-blending and refinement, the wine undergoes clarification, filtration, and stabilization before bottling.This meticulous process results in a wine that epitomizes the essence of its unique terroir and delivers a balanced winewith outstanding depth of flavor.

Squid Ink captivates with its unique depth of color, derived from mature Cabernet Sauvignongrapes coming and extended maceration.Aromas of black currants, vanilla, and tobacco. On the palate, it delivers delightful flavors, offeringa harmonious blend of dark fruit, subtle hints of vanilla, and a touch of earthy tobacco.
