The Squid Inc philosophy is to gently extract and preserve the aromas, flavors, and unique deep color of the exceptional Cabernet Sauvignon fruit. 

The process begins by cooling the grapes to around 51°F before pre-fermentation. Maceration lasts a lengthy 84 hours to optimize aromatics and color extraction. Three daily pump-overs ensure thorough extraction, while fermentation enriches the wine’s structure. Following fermentation there is an additional week of post fermentation maceration.

After natural malolactic fermentation, the wine quietly ages in French oak barrels for 10 months, imparting subtle oak nuances. Post-blending and refinement, the wine undergoes clarification, filtration, and stabilization before bottling. This meticulous process results in a wine that epitomizes the essence of its unique terroir and delivers a balanced wine with outstanding depth of flavor.
